The Gibson is a mixed drink made with gin and dry vermouth and considered a cousin of the classic martini, distinguished by its signature garnish of an onion instead of an olive. The first known Gibson recipe was published in more than a century ago in 1908.

Dry Gibson Martini
- 2½ oz gin (vodka)
- ½ oz dry vermouth
- 3 Sable & Rosenfeld Vermouth Tipsy Onions
- Pre-chill glass.
- Fill martini shaker with ice cubes.
- Pour in gin (vodka) and vermouth. Shake.
- Strain into glass and garnish with three Vermouth Tipsy Onions.
Spicy Gibson Martini
- 2½ oz gin (vodka)
- ½ oz dry vermouth
- 3 Sable & Rosenfeld Vermouth Jalapeño Tipsy Onions
- Pre-chill glass.
- Fill martini shaker with ice cubes.
- Pour in gin (vodka) and vermouth. Shake.
- Strain into glass and garnish with three Vermouth Jalapeño Tipsy Onions.
Upside Down Dirty Gibson Martini
- 3 dashes lemon bitters
- 2 dashes wormwood bitters (optional)
- 2 tsp Sable & Rosenfeld Vermouth Tipsy Onion brine
- 2 oz dry vermouth
- 1 oz gin
- 1 Sable & Rosenfeld Vermouth Tipsy Onion
- Add 3 dashes lemon bitters, 2 dashes wormwood bitters (optional), 2 tsp pickled onion brine, 2 oz dry vermouth and 1 oz gin to a mixing glass filled with ice.
- Stir and strain into a chilled cocktail glass.
- Twist a strip of lemon peel over glass and discard.
- Garnish with a Vermouth Tipsy Onion.
