Orzo Salad with Bruschetta & Feta

Orzo is a a form of short-cut pasta, it is versatile and works well with light and bright flavours. You can add spinach, other greens and/or sun-dried tomatoes for color. Can also add toasted walnuts or pine nuts for crunch.

DIRECTIONS

  1. Cook orzo in boiling salted water until al dente. Drain and set out on a cookie sheet to dry.
  2. To the cooked orzo add feta and Bruschetta. Mix well. Add pepper to taste.
  3. Notes: Can add spinach, other greens and/or sun-dried tomatoes for color. Can also add toasted walnuts or pine nuts for crunch.
