Orzo is a a form of short-cut pasta. It is versatile and works well with light and bright flavours. You can add spinach, other greens and/or sun-dried tomatoes for color. Can also add toasted walnuts or pine nuts for crunch.
INGREDIENTS
- 1¼ cups orzo pasta
- ⅓ cup feta cheese, cubed or crumbled
- ½ cup Sable & Rosenfeld Mediterranean Olive Bruschetta or Spicy Olive Bruschetta
- Freshly ground pepper, to taste
PREPARATION
- Cook orzo in boiling salted water until al dente. Drain and set out on a cookie sheet to dry.
- To the cooked orzo add feta and Bruschetta. Mix well. Add pepper to taste.
