Grilled Cobia Mediterranean

Grilled cobia topped with Olive Bruschetta

Featuring Sable & Rosenfeld Olive Bruschetta.

Ingredients

  • 3 lbs cobia
  • ⅓ cup olive oil
  • ⅓ cup lemon juice
  • 1 clove garlic (minced)
  • 1 tsp salt
  • ¼ tsp pepper
  • Sable & Rosenfeld Olive Bruschetta

Preparation

  1. Cut the fillets into serving-size pieces and place in a bowl. Combine the olive oil and lemon juice, add the remaining seasonings, and mix. Pour the mixture over the fish and marinate for 5–10 minutes.
  2. Remove from the marinade and grill for about 6 minutes over coals, basting several times with the marinade. Turn and grill an additional 4–6 minutes, until the fish is opaque and separates easily.
  3. To serve, top each fillet with warmed Olive Bruschetta, with additional bruschetta on the side.
