Featuring Sable & Rosenfeld Olive Bruschetta.
Ingredients
- 3 lbs cobia
- ⅓ cup olive oil
- ⅓ cup lemon juice
- 1 clove garlic (minced)
- 1 tsp salt
- ¼ tsp pepper
- Sable & Rosenfeld Olive Bruschetta
Preparation
- Cut the fillets into serving-size pieces and place in a bowl. Combine the olive oil and lemon juice, add the remaining seasonings, and mix. Pour the mixture over the fish and marinate for 5–10 minutes.
- Remove from the marinade and grill for about 6 minutes over coals, basting several times with the marinade. Turn and grill an additional 4–6 minutes, until the fish is opaque and separates easily.
- To serve, top each fillet with warmed Olive Bruschetta, with additional bruschetta on the side.
